Winter grilling on a cast iron grill pan is not quite as authentic as a BBQ but it’s pretty darn close. These jerk chicken skewers are definitely reserved for lovers of spicy food and my marinade uses gracefoods jerk seasoning as a base. Warning: turn your stove fan to maximum and avoiding breathing in the steam when cooking these inside or you’ll regret it. 🍖

INGREDIENTS

2 chicken breasts
½ tbs Jerk seasoning
1 tbs olive oil
1 tsp maple syrup
3 cloves garlic
½ tsp fresh ground pepper
½ tsp salt
1 red pepper
1 green pepper
½ onion

INSTRUCTIONS

Cut chicken breasts into 1 inch cube pieces and place in a bowl. Add jerk sauce, olive oil, maple syrup, garlic, and half of the salt and pepper. Stir, cover and set aside to marinate for 30 minutes. Cut pepper and onion into 1 inch rectangular pieces and place in a bowl. Drizzle with olive oil and season with remaining salt and pepper. Thread chicken, peppers, and onion onto skewer sticks alternating vegetables. Heat BBQ or grill pan and grill skewers turning periodically until cooked through.
