Shakshukaaaaa!!

Shakshuka is a popular North African/Middle Eastern dish. It is basically eggs poached in a hearty spiced tomato sauce. There are so many variations with different spices and ingredients that make it even more fun, delicious and exciting to eat! Today I chose to mix a few of my personal favorite flavours and ingredients. This is my Smoky Roasted Eggplants and Chicken Bangers Shakshuka with Truffle Gouda cheese. Don’t those flavours sound so good together? Well, it is! 😌

I usually just eyeball this so I don’t have actual measurements of the ingredients. But here are the approximate measures of Ingredients

– 6 Eggs
– 2 large Eggplants(read below on how to prep)
– 1 Cups Diced Tomatoes
– 2 Red birdseye Chillies
– 3 Garlic cloves
– 2 Tbsp Oil
– 1 Large Onion
– 6 Pcs Chicken Bangers
– 1 Tsp Turmeric Powder
– 2 Tsp Coriander Powder
– 2 Tsp Smoked Paprika Powder
– 1 Tsp Chilli Powder
– 1 Tsp Tomato Paste
– 1/4 Cup Truffle Gowda Cheese
– Salt
– Pepper

Preparation for the eggplants are as s: The eggplants are roasted right over the grill or flame on high, until all sides are charred. This burnt layer infuses the flesh with the smoky flavour. The charred skin is then removed and discarded leaving just the flesh of the eggplants. I dice it up roughly and set it aside for use.
You can also choose to roast the eggplant in an oven but that takes time and you don’t normally get that deep smoky flavour that we want for this.

The flavours of the spiced tomato sauce, smokey eggplant, chicken bangers and the truffle gouda cheese all come together so well with the poached eggs. It’s such a great breakfast, brunch, lunch or dinner for me.
