Ranginak (Persian Date Dessert)
Flour is one such ingredient every household has in their pantry! Different varieties of flours can be used to make a huge variety of sweet or savoury dishes. It can be steamed, fried, boiled, or baked. Here, I used wheat flour which is first dry roasted and the fried in oil to make this simple yet delicious persian dessert.
To make this, the dates are first deseeded and stuffed with Walnuts, Pistachios or Almonds. Then we arrange them side by side on a plate while we prepare the flour mixture that goes on top.
To make the flour mix, we dry roast some wheat flour in a pan while continuously moving it around so it doesn’t burn. It will eventually turn a bit golden and fragrant, which is when we pour in the oil. As we pour the oil in, we simultaneously keep mixing until it has a thick liquid like consistency. After frying it on a low flame for a bit, we pour this hot flour mixture over the arranged dates. We then garnish the top with some cinnamon powder, sugar and crushed pistachios and let it sit a couple of hours before digging in!
