One of my favourite southern pub snacks are hushpuppies. These little golden fried cornmeal balls are just perfect smothered with butter (or tartar sauce) and a draft beer but since I was in my own kitchen I settled for a cold bottle. 🍺

INGREDIENTS

Hushpuppies:
1 cup cornmeal
1 cup flour
2 tbs sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 ½ tbs cajun seasoning
1 cup buttermilk
1 egg
2 tbs green onion
5 tbs grated cold butter

Tartar Sauce:
3 tbs mayonnaise
1 tbs relish
½ tsp dijon
1 tsp lemon juice

INSTRUCTIONS

In a small bowl mix the ingredients for the tartar sauce. Cover and refrigerate until ready to serve. Preheat oil in a pan or deep fryer to 375 F. Grate the butter with and keep cold until ready. In a large bowl mix the dry ingredients. In another bowl mix the buttermilk, egg, and green onion. When combined, add to the dry ingredients to the wet and mix well. Add the butter to the mixture and combine. Using a curved spoon, carefully spoon the mixture and gently drop into the oil in sphere-ish shapes. Fry until golden brown on all sides and batter is cooked through, turning occasionally, approximately 4-6 minutes. Remove from oil and rest on a paper towel lined metal rack. Serve immediately with butter and tartar sauce.
