Most of my recipes have been what you might expect for dinner but here is one of my classic go-to lunches: a tuna salad sandwich. This meal is a bonus for my cat, Kitty, as her favourite human food is the liquid drained from the tuna can. I chose a toasted rye bread to go with it because I like the extra crunch but it goes well with just about anything, or even on its own if you want to be a little more low carb. 🥪
1 large can tuna
1 ribs celery
¼ cup sweet onion
1-2 tbs mayonnaise
1-2 tsp dijon mustard
Splash lemon juice
Salt & fresh ground pepper to taste
Dash cayenne pepper
Finely dice celery, carrot, and onion and place in a bowl. Open the can of tuna and drain liquid before adding to vegetables.
Add mayonnaise, dijon, lemon, garlic powder, salt, pepper, and cayenne. Mix well. Serve with toasted bread of choice.
