This has always been my family’s go to soup year round but mostly during fall and winter! It is super nutritious, creamy, filling and just warms your soul!
We have a few variations when making this soup but I wanted to keep things simple and uncomplicated for this post!
I normally wash and soak the pearl barley a night before. Then the next day, I just add chicken or vegetable stock to it and let it cook before adding it to the soup.
The milk needs to be warmed before adding into the soup and cooked on a low heat so that it doesn’t ‘break’ or curdle.
Keeping these 2 key tips in mind, you can make this soup your own with whatever veggies and herbs you like.

1 large Onion (diced finely)
1 cup grated Carrot
1 cup grated Potato
1 cup Pearl Barley (cooked in 4 cups of stock)
3 cups Milk (warmed)
2 cloves Garlic (minced or chopped finely)
1 cup chopped Parsley
