Baked Cod fillets in mushroom leek sauce with sides of butter garlic vegetables and garlic herbed hassleback potatoes 😌

I’ll share a recipe on how to make the hassleback potatoes and the butter garlic vegetables sometime later.
As for the Baked Cod with mushroom and leek sauce, this is how I made it!
I just eyeballed it all so I don’t have specific measurements but here are the Ingredients for the Baked Cod:

Cod fillets
Leeks
Sliced White mushrooms
White flour
Cream
White pepper
Crushed black pepper
Salt
Garlic powder
Sliced white onion
Grated Mozarella cheese
Thyme
Minced Garlic
Butter

Preparation:

• In a plate mix a couple of table spoons of flour with salt, pepper and garlic powder.
• Dredge the fish fillets in the mixture
• Lightly fry the fish, do not cook it fully
• Arrange into a casserole pan and keep aside
• In another pan, add some oil and butter
• Add the sliced onions, garlic and leeks and sautee a bit. Then add the mushrooms, white pepper and a pinch of crushed black pepper and sautee till the moisture is gone.
• Add in a spoon of flour and sautee
• Add in hot water and keep mixing till you get a saucy consistency.
• Keep stirring and let it cook a couple of minutes.
• Stir in the cream and turn off the heat.
• Pour the mushroom leek sauce over the fish fillets.
• Sprinkle some mozarella cheese and thyme on top and bake in the oven at 180 deg C for 25 to 30 mins
