Back to our regular programming with this deliciously fresh homemade bruschetta half classic and half with feta cheese. The perfect appetizer for an Italian inspired meal. 🍅
1 cup diced roma tomatoes (pulp removed)
¼ cup finely diced sweet onions
4 cloves mashed garlic
2 tbs olive oil
½ tbs red wine vinegar
Salt & pepper
¼ cup crumbled feta cheese (optional)
Slice tomatoes to about ¼ inch and remove pulp before dicing and place in a bowl. Add onions, garlic, olive oil, vinegar, pepper, salt, and feta (optional). Mix thoroughly. Cover and put in the fridge. Let flavours blend for 2 hours before serving.
