Asian Kale Salad

We love a good kale salad in our house and I try to find ways to make it a bit more interesting each time I make one. So, this time I came up with this Asian inspired kale salad with an Asian inspired Vinaigrette 😋
It’s SO good that even non salad lovers like my dad will be asking for seconds 😁

The Ingredients for the salad are as s:
– 3 – 4 Cups finely chopped kale
– 2 Tbsp Olive oil (to massage into kale)
– 1 cup finely julienned Carrots
– 1 cup finely julienned Red Cabbage
– 1 cup finely julienned Red Pepper
– 1 cup finely chopped Coriander
– 1/4 cup finely chopped Green Onion
– 1/4 cup roasted peanuts
– 1/4 cup boiled edamame beans
(I was out of edamame and didn’t use it but I usually put in some, you can skip it if you want)

Ingredient for the Asian Inspired Vinaigrette is as s:
– 2 – 3 Garlic Cloves (diced finely)
– 1 Tbsp Ginger Pickle (chopped finely)
– 1 Red Birdseye Chilli (chopped finely)
– 2 Tsp Sesame Seeds
– 2 Tbsp Light Soy Sauce
– 1 Tbsp Sugar
– 1/2 Tsp Salt
– 4 Tbsp Lemon Juice
– 1/4 Tsp Lemon Zest
– 2 Tbsp Olive Oil

To make the Vinaigrette:
– Muddle the garlic, pickled ginger and chilli in a mortar and pestle with the salt and sugar.
– Add in the rest if the ingredients and mix well before using it.
