A classic use of caramelized onions: French Onion Soup. This soup is simple and delicious and I find the richness of the onions of melted cheese perfect for a cold winter night. Check out my earlier post for the steps for the onions. 🍲

INGREDIENTS

1 cup caramelized onions
3 cups beef broth
2 cups chicken broth
2 tbs cognac/brandy
½ cup dry white wine
½ tbs flour
1 sprig rosemary
2 sprigs thyme
Salt & pepper
¼ tsp Old Bay seasoning
Baguette or ciabatta bread
1 cup grated swiss cheese

INSTRUCTIONS

See earlier recipe for caramelized onions. Add 1 cup of caramelized onions to a medium pot. Prepare a flour slurry with 1 tbs water and pour over the onions. Add white wine and brandy and bring to a boil and simmer for 5-10 minutes until the liquid starts to reduce. Add beef and chicken broths, rosemary, thyme, salt, pepper, and Old Bay. Simmer for at least 20 minutes. Use a bread roughly the size of your soup bowl opening so it will not drown in the liquid. Toast in advance. Spoon the soup with generous amounts of onion into french onion soup bowls. Top with toasted bread and grated swiss cheese. Place the bowls on a baking tray and in the oven on broil for 6-8 minutes until the cheese is bubbling and starting to brown.
